In some ancient societies (approx 3000 BC), if a married man died, it was the duty of his wife to follow him to the grave and be buried at his side. In later civilisations, the actual wife was replaced by braided locks of her hair.
Eventually, this custom became the placing of a braided/plaited loaf in the grave. Much to the relief of wives in general, especially those who may well have worn their hair short!
INGREDIENTS
700 gms strong white bread flour
450 gms tepid water
25 gms unsalted butter
10 gms crushed sea salt
15 gms dark sugar
25 gms sesame seeds
25 gms sunflower seeds
25 gms linseed (or poppy, or whatever you have to hand)
10 gms easy bake, instant active yeast
and for the glazing
a little milk
a handful of seeds (poppy seeds are ideal as a topping)
METHOD
Mix the dry ingredients together. Slowly add the water and butter and bring everything together.
Knead until you have a soft and silky dough
Place the dough in a lightly oiled bowl, cover and leave in a warm place until it has doubled in volume.
Tip the dough out onto a lightly floured surface, weigh and divide into three equal portions.
Form each portion into a ball, cover and leave to rest for ten minutes.
Now, roll out each portion into a 'rope' about 30 - 40 cm long.
Place them side by side, pinch the tops together and then plait them. Pinch the bottom ends and tuck them underneath to make a tidy plait.
Preheat the oven to 190⁰C, brush the dough with milk and scatter more seeds on the top.
Cool on a rack.
