Carton Juice Bread (Apple)
If, like me, you often have a carton of fruit juice lurking in the recesses of the refrigerator, then fear not, it can be put to good use as the basis of a lovely, soft and fragrant loaf.
Orange juice, pineapple juice, beetroot juice all work equally well....but this loaf is made using carton apple juice.
I add sunflower seeds to mine, but you could just as easily blend the flour with wholemeal or add a touch of cinnamon for that festive flavour.
INGREDIENTS
500 gms strong white bread flour
325 gms cartoned apple juice (either made from concentrates or not)
20 gms dark brown sugar
10 gms fine sea salt
25 gms unsalted butter
7 gms instant active yeast
METHOD
Place all the ingredients in a large bowl and knead until you have a soft and silky dough.
Place in a lightly-oiled bowl and leave to double in a warm place.
Knock back and shape for a suitably sized loaf tin or baking sheet.
Leave to proof again
Preheat the oven to 180⁰C (Fan) / 200⁰C Conventional and bake for 30 minutes until golden brown and hollow when tapped on the underneath.
Cool on a rack
