Courgette Loaf

INGREDIENTS
500 gms strong white bread flour
350 gms coarse grated courgette
150 - 180 gms water (adjust as needed) I needed 170 gms
7 gms honey or brown sugar
25 gms olive oil or unsalted butter
7 gms fine sea salt
7 gms fast action yeast
METHOD
Toss the grated courgette with a pinch of salt into a colander and leave for 15 minutes.
Then wrap the courgette in a tea towel and squeeze as though your life depends on it, extracting as much water as you can.
Weigh out 220 gms squeezed courgette.
(NOTE: IT'S 220 GMS OF SQUEEZED COURGETTE FROM THE ORIGINAL 350 GMS OF RAW COURGETTE TO ALLOW FOR WATER EXTRACTION)
Add the flour, salt and courgette to a large bowl. Mix well.
Add the yeast, honey(or sugar) and oil (or softened butter) and mix well.
At this stage, if you wish to add a sharp cheese (e.g. cheddar or Parmesan) then add 60 gms of grated cheese. You may also wish to add a sprinkling of fresh herbs (dill or oregano or thyme or chives)
Add 150 gms of water and bring together into a rough dough. Add a little more water as necessary if the mix remains dry.
Knead for at least 10 minutes until you have a smooth, silky and elastic dough.
Place in a lightly-oiled bowl and let it rise at room temperature for one to one and a half hours until it has doubled in size.
Prepare a large loaf tin. Shape the dough on a lightly-floured board and aim to fill the tin ever so slightly over half way.
Cover and leave to prove until the dough rises above the rim and the shoulders are level with the top of the tin.
Preheat the oven to 180⁰C (Fan) / 200⁰C (conventional) : 356⁰F (Fan) / 392⁰F (conventional).
Glaze iof you wish and sprinkle with seeds and then score the surface of the dough and bake for 30 - 35 minutes until deep golden brown and hollow when tapped on the underside.
Cool on a rack before slicing.
